Hello,
You can use 'Loop with condition' and 'String Manipulation' command to count the occurrences of a text in a string.
We have attached a sample task for your reference. Please copy it under location, 'C:\...\My Documents\Automation Anywhere\Automation Anywhere\My Tasks' folder.
Task would show you the occurrences of 'food' in a message box.
